I know in the CP there's an option to remove the message totally but how do you make it so it does not appear for Admins or Moderators?

In the file ubb_edit_post.cgi, here's the line that'd need changing:

Tray to replace it by
[code][/code]

Keep getting this:

For the admin and modulator try this I have try it and it is working for me

You have to replace this

The above code will remove edit by …. When the admin or mod.. has edit the post after the user
