Old mods I'd love to see resurrected for 7.x ... 
1. Private moderation
2. Alt Body Preview - although it looks like Ian might do this one.
3. Can't find the mod post now, but it was called PM mailer, and it added the ability for users to email their PMs to themselves, so that they could keep records. This was great for admins and moderators.
