Hmm...I'm not using 6.1 but the closest thing I can think of is the codes you're looking for should be located in the ubb_forum_summary.cgi file (cgi-bin). For example, in UBB version 6.2.1 the code will look similar to:

In UBB version 6.1 it may be different. Now while I'm not sure if you can just delete this code bit and your subject info will appear...That you will have to experiment with.
