Does anyone know how I can modify this or Delete the whole column?

check in public_forum_summary.pl and just delete the row with last post...

You'll have to delete two parts. The first part will be the header for the last post column. Then a little ways farther down will be the actual place where the column is. I'm pretty sure you'll also have to knock the colspan number on the category strip down one too.
