Where can i find the codeing for :
Main catagory/forum listing lay out;
Topics lay out;
Topic thread lay out;

what files do what is basicly what this is about. Im fairly decent at coding, but theres so many ubb files im not to sure were to start.

Check the templates forum for an old thread in which we did just that with all the public templates... it's one of the first threads in that forum.
