After a new user registers, this is the error my UBB barfs back:
Server Error: "550 unknown user "
Server Error: "503 must have sender and recipient first "
Server Error: "502 unimplemented command "
They can still continue with their registration, it's saved in the members directory and everything continues as if they never got those three messages.
Any ideas what would cause them?

Looks like and error when the ubb is trying to send the user an email about their registration.
What system are you running on *nix or Winblows?
Using POP or sendmail?
I can't afford a good signature editor

Maybe the sendmail path is wrong. If the problems persists try not using Email password and let them make their own if you can't fix the prob.
