how do add the custom icons/folders/etc to my ubb?

Upload the new files to replace the old ones. Simple as that.

You can upload the graphics to your noncgi directory. Then when you are creating/editing your style template from the control panel, reference the names of the files that you've added.
For instance, you created a different folder you want to use, and called it myfolder.gif. Upload it, then in your template enter myfolder.gif.
