Turn it off in the general display settings in the CP.

Personally I would love this to go one step further, where post counts are not available anywhere publicly, including public_display_profile, the directory, etc.

I think this is a good idea for some sites also. I used to have them turned off at Netwerkin because I hated people being treated badly because they were newbies. I allow people to request modifications to their postcounts now so you never really know how many oists any of us has. I keep mine at 1 all the time.
