I've had some feedback from my boards moderators not liking the new icons for moderator/admin. The comment was "I don't want to be flagged +up as a moderator in such an in-your-face way, it detracts from the independent +perspective of the BBS."
Is there an easy way that turn this off and could it be made a configurable option?

The quickest way would be to just replace the flag image with a transparent (ie invisible) one. That way it's still there...but no one will know (unless they view the source code itself for the page)

What I would do is dig into showthreaded and showflat... and postlist, and any other file the flags appear in... and find mod.gif and adm.gif... or just do a global find of mod.gif and adm.gif to see where they are, and then remove the proper code. Probably just a line of HTML putting them in there. (Sorry, I still haven't convered to 5.1.2) Yes, it probably should be an option... I like most things to be optional.
