I do not want any icons or colors for Mods and Admins, how would I edit this out ?

You have to edit existing users to change their color by editingn their profile. Then you can set the default color for future admins/mods in the Theme file. To remove the admin/mod flag - replace those images with a 1x1transparent gif by the same name.
