I need to customize my digest emails but cannot find the file that they are generated from. Is it a template file? Any ideas how I would go about inserting some wording at the top of these emails?

I believe the subscriptions.php files in the languages folders are the ones to edit.

Ok, do I just drop the text in that I want to add at the top before the PHP code or does it have to go somewhere else?

Compare the language file with the email you get. Look for the part that appears at the beginning of the email, then append to the beginning of that what you want.
