Guys, when sending PMs how do I make the option "I want to keep a copy of my message" a default setting, so that this box is automatically ticked each time?

Take a look at the template file, the box setting is there.

Can I edit this out via the CP, or do I need to manually alter the files?

What exactly needs to be changed?

You can edit the template files within the control panel.
Display Options -> Templates

Ok, I'm in sendprivate.php and I see the following line:

<input type="checkbox" name="ccopy" value="1" class="formboxes" />
{$ubbt_lang['MESS_COPY']}

Is it the value that I need to change?

Yes, just change it to:
<input type="checkbox" name="ccopy" value="1" class="formboxes" checked="checked" />
{$ubbt_lang['MESS_COPY']}
