RH 8 for intensive purposes is not ready for a mission critical hosting environment. A lot of little bugs and oddities that could cause trouble. I have seen some servers running it without a problem, but others have also had nightmares due to little bugs with php and such.
I use 7.3 on my servers, and most other places I have hosted used 7.2 or 7.3. You really aren't going to notice a difference, but I tend to stick with 7.3.
